aura, a native San Diegan, is a Garde Manger Chef. She founded San Diego Fruit Carving in 2007. She fruit and vegetable carving instructor trained by Wan Hertz at the Siam Carving Academy, Thailand. Laura has additionally furthered her culinary education to include food safety, preparation, catering.

nstructing fruit and vegetable carving comes naturally when the years of perfecting the artform become a passion as much as a skill. Laura has a respect for this unique skill as it is a cultural treasure of Thailand. She enjoys teaching the beginning student as well as the advanced. Her student's work reflects the care with which she passes on this 700 year-old tradition.

ulinary competitions are a chance for her to showcase her new ideas and creations. She enjoys travelling to the major competitions where she can share ideas. In 2015 she won the ACF United States Culinary Fruit and Vegetable Carving Professional Competition held in Seattle. Among her other first place finishes is the 2014 Catersource ACF Las Vegas Culinary Challenge.

ompetitions also allow mingling with new trendsetters, sharing ideas, and returning with new skills to offer clients and students. Most competitions are timed, and assistance can only be offered for the most basic needs. The actual carving is always as much fun as the finished results as bystanders can see the carvings take form.
